Yumming it up with Kale

We’ve had some much needed rain here in Central Virginia – too late for our farmers’ corn crops, but it has certainly helped our drought situation become a little less severe. So, rainy weather always makes me think -SOUP !!

I made a really quick and easy soup for lunch this week. There was a can of chunky veggie soup in the pantry. And there was kale in the fridge. Voila! Soup for lunch!

I washed and stemmed a couple of handsful of kale. I added a little olive oil to a skillet (about a tablespoon or so) and a mashed garlic clove. Just as the garlic started to soften, I added the kale and gave it a quick stir fry until it was wilted. That was added to the chunky vegetable soup that was simmering on the back burner. I let all that heat up for a couple of minutes and had a very satisfying soup for lunch!
