Spent some time this week adventuring through Pinterest just drooling over all the fabulous recipes! It’s foodie heaven with all the visuals of yummy food. After that, found myself really wanting something stir fried to eat, so I thought I’d make Chicken and Broccoli Stir Fry.
A trip to the store for chicken tenderloins, broccoli, garlic and an onion. Cubed the chicken, cut the broccoli into manageable bitesite pieces, sliced the onion into slivers, chopped garlic. All set to go!!!
As I put the oil in the skillet, I thought, “is there any chicken broth in the house?” Nope, not a drop. Now what? The chicken was being stir fried, and it was time to add the veggies. No time to run back to the store. Hhhmmmmm….. there’s some ramen noodles hanging out in the pantry.
Got the ramen out, broke open the packet of flavoring. Used half of it mixed with a half a cup of cold water, 2 tbl.corn starch and about 1/4 cup of soy sauce to mix in with the chicken and veggies in the skillet to form the sauce. Used the rest of the flavor packet for the ramen noodles (which were drained after cooking).
And you know…I was really surprised as it made a tasty dish… not too bad for stir frying by the seat of my pants !!!
