Yesterday, as part of the VDACS inspection process, I was asked to make and bake an item while the inspector was present. I chose to make this fabulous cinnamon swirl coffee cake, because a) it bakes up beautifully and b) it smells so darned good while it’s baking! We use a high quality Vietnamese cinnamon in our baked goods that require cinnamon – it gives quite a cinnamon kick to the taste buds!
Needless to say, by the time the coffee cake was finished baking, both the inspector and I were very ready for a slice of it!
